GOOSEBERRY AND ELDERFLOWER FLAPJACKS

INGREDIENTS:

  • 150g rolled oats
  • 100g wholemeal flour
  • 50g brown sugar
  • 50g butter, melted
  • 50g honey
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 150g fresh or frozen gooseberries
  • 2 tsp elderflower cordial (optional)

PREPARATION:

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, mix together the rolled oats, wholemeal flour, brown sugar, melted butter, honey, baking powder, ground cinnamon, and salt.
  3. Add the gooseberries and stir gently to coat them in the mixture.
  4. If using elderflower cordial, stir it in at this stage.
  5. Pour the flapjack mixture into the prepared baking tray and press it down firmly with the back of a spoon or spatula.
  6. Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the edges are slightly crispy.
  7. Let the flapjacks cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
