Baking is one of my favorite hobbies, and I love trying out new recipes. Recently, I came across a recipe for High Fibre Puffed Wheat Nutty Banana Flapjacks and just had to give it a try. Here’s how I made them:
Ingredients
- 1 cup puffed wheat
- 1/2 cup almond flour
- 1/4 cup honey
- 1/4 cup coconut oil
- 1/2 cup mashed bananas
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix together puffed wheat, almond flour, honey, and coconut oil until well combined.
- In another bowl, mash the bananas and mix in the walnuts, dried cranberries, and vanilla extract.
- Add the banana mixture to the flour mixture and stir until well combined.
- Using an ice cream scoop or spoon, portion the batter onto the prepared baking sheet and flatten slightly.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Let the flapjacks cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 1 week.
